Showstopper’s Scintillating Salad for Two

This one is for all those people who love to eat well, even if they are on a diet. Low on calorie and high in taste, this is a very simple salad for two. Don’t panic seeing the long recipe, trust me its easy to make!

Ingredients

For Salad

  • 4 lettuce leaves
  • 2 tomatoes
  • 2 potatoes
  • 3 sausages
  • 2 eggs
  • 1 slice of lemon
  • 1 Onion
  • 2 cloves garlic
  • 2 tsp oil
  • Fresh dhania (coriander)
  • Salt & sugar
  • Bread

For Dressing

  • 300 gms Curd
  • Pinch of salt and sugar
  • 1 tsp Pepper
  • 1 tsp Milk powder
  • 1 tsp Paprika (optional)
  • 1 tsp Oregano (optional)

Salad Preparation

Wash the lettuce leaves and spread on plates.

Bakers basket: Cut half the onion into finely chopped pieces. Make small openings on top of the tomatoes and take out the flesh and add to the onions in a bowl. Chop dhania finely and add them to the mixture. Mix well, then stuff inside the tomatoes.

Wash the potatoes and make small pores on them with form. Cut them into half, without detaching them

Garlic Gargle: In another bowl pour half tablespoon oil, add vinegar and half clove garlic.

Put the stuffed tomatoes and the potatoes in microwave proof container and sprinkle some of the garlic flavoured oil on them and cook for five minutes on high. Take out tomatoes after that and continue to bake the potatoes for 5-7 minutes more till nicely golden. Put them aside.

Scrambled Success: In a pan heat 1 tsp of oil and make scramble eggs. Put them aside.

Bohemian Bread: Cut as many bread pieces you want into small cube size portions. In a baking tray place the slices, taking care to spread them around. Pour a part of the remaining garlic flavoured oil on the slices and bake till crispy.

Dressing Delight: Take the curd and allow it to run through a sieve holding it over a bowl. All the water in the curd will accumulate in the bowl. It’s best to give it an hour, after which a thick creamy layer will be left behind. In a bowl add finely chopped garlic, salt sugar, milk powder, pepper, paprika and oregano. Mix well then add the curd. Your dressing is ready.

The Scintillating Salad

Use the dressing on the lettuce leaves — be generous. Place the baked tomatoes on top of sliced onions and make the potatoes stand touching it. Add the scrambled eggs to the side. Cut sausages length wise and use for decoration. Place the toasted breads all over the plate as you wish. Sprinkle lemon juice if you like a tangy taste.
